Tom Bruce has operated a restaurant consulting company, Sacramento Food & Beverage since 1978. A former chef, Tom initially based his primary operations in the Sacramento area, but, over the years, his restaurant consulting client base has expanded to include operators worldwide, ranging from sophisticated multi-unit operations to smaller single unit ventures.
Tom Bruce has been serving the hospitality industry for over 30 years. An instructor for American River College, he is certified by the National Restaurant Association, California Restaurant Association, and is an accredited vocational instructor through UCLA and a qualified HACCP instructor as well.

Edmund Woo has spent his entire life in the restaurant industry. In 1980, when he was twenty, he decided to get serious about being a restaurateur and opened his first restaurant. From that start, Edmund continued to learn from the successes and failures in the restaurant industry – both his own and that of others, creating, owning and operating numerous concepts from casual fine dining steak house, ethnic cuisines like upscale country French and fast casual Chinese, 50’s style Diner, etc.
In his own desire to maximize his efforts, Edmund utilized the minds of many of the best restaurant consultants himself. In fact, his association with Tom Bruce began with his hiring Tom as his own restaurant consultant. His current operation, The Saskatoon Steak Fish and Wild Game concept is his crowning achievement, incorporating the elements that create a highly appealing business and restaurant lifestyle for the operator and a unique and fulfilling dining experience for the customer.
